Eating healthy never tasted this good! This fruit and berry pudding is perfect for breakfast, brunch or snack on a hot day. Bursting with fresh blackberries, flaky coconut and crunchy pistachios, it’ll become a favorite of yours too!
In order to make this delicious dish fit the whole30 program, you’ll need to ensure that you make your own almond milk or choose a brand that fits the whole30 guidelines.
½ cup blackberries
3 tablespoons chia seeds
1 cup unsweetened almond milk
¼ teaspoon vanilla extract (or 1/8 of a vanilla bean scraped)
1 tablespoon unsweetened shredded coconut
10 raw, unsalted pistachios, chopped
In a pint mason jar, Crush the blackberries with a fork, creating a “jam”. Stir in chia seeds, almond milk, vanilla extract, and shredded coconut until combined. Cover, refrigerate overnight.
Just prior to serving sprinke the tops with chopped pistachios and sprinkle them over the chia pudding. Enjoy!
