Spring Berry White Chocolate Muffins

As much as we adore fresh berries, this delightful recipe is perfect for a taste of Spring all year long. It combines chocolate, berries and a light buttery muffin to create the most delicious brunch recipe!

Before you begin preparing the muffins, preheat the oven to 350F.

You’ll Need:

1 cup flour (All-Purpose)
1⁄2 teaspoon baking powder
1⁄4 cup sugar
1⁄4 cup white chocolate chips
1 egg, lightly beaten
1⁄2 cup buttermilk
1⁄2 teaspoon vanilla extract
1⁄4 cup butter, melted
1⁄3 cup frozen mixed berries

Line a muffin tin with liners or lightly grease the bottoms and sides with butter or coconut oil.

In a small bowl whisk buttermilk, egg, butter and vanilla extract and set aside. In another bowl combine flour, baking powder and sugar, mixing well to ensure they’re fully combined. Gradually mix the wet ingredients into the dry ingredients, just until incorporated.

Do NOT Overmix. Overmixing muffins makes them tough.

Fold the berries and chocolate chips into the batter. Fill the prepared muffin tins 2/3 full and bake for 20-24 minutes.

Did you know?If your muffins have Peaks on them when they’ve completed baking this means that you likely over-mixed the batter when preparing them.

A note about the Buttermilk, if you prefer a lower fat version you can use regular milk, almond milk or even skim milk but the muffins will not be as rich and buttery tasting.
