Depending on the time of year that you make this limes may or may not be in season. If they’re not in season you can use ReaLime, which is 100% juice and imparts decent flavor to the recipe. It’s a great alternative to fresh limes. However, if you happen to have fresh limes on hand, here’s a simple method to ensure that every drop of juice is extracted, avoiding any waste:

2 Large ripe avocados (or 4 small)
1/2 medium-sized red onion, finely diced

In a medium bowl, mash avocados to the desired consistency (if you prefer your guacamole smooth, mash well, if you prefer it chunky, mash lightly.) Fold in the rest of your ingredients except the lime juice.

Squeeze the lime juice over the top and then gently fold it in again. Season with salt and pepper.

If your guacamole is going to be refrigerated overnight, you can place 1 avocado pit in the dip (until serving time) this will keep your guacamole from discoloring.

Sriracha Vodka Guacamole is an incredible flavor combination. The Sriracha gives the guacamole a nice spice, while the vodka helps to bring out the flavors of the avocado and lime. I was worried that the vodka would make the guacamole too watery, but it actually helped to thicken it up. This recipe is definitely a keeper!
