This Sausage, Potato and Pepper Skillet dinner is one of our favorite go-to meals for a busy weeknight, it also happens to be a dirt cheap meal that will easily feed 6 or more people.
First and foremost, you’ll want to use whatever sausage you can find on sale, it usually runs about $1.99-$2.49 in our area when it’s on sale. However, we frequently make our own, when pork butts are on sale for $1.29 a pound.
You’ll need:
4-6 Large Potatoes, scrubbed clean & cut into chunks
1 Lg Bell Pepper (red/green/whatever), cut into small chunks
1 pound Sausage, cut into 1/2″ chunks
1 Large onion, cut into chunks
Scrub the potatoes thoroughly because we’re not going to bother to peel them. Cut them into chunks. Heat 2 Tablespoons of butter in large skillet over medium-high heat. Add the potatoes and cook until they’re about half done. Add the onion chunks, cook about 2 minutes, stirring with the potatoes.
Add the sausage, stirring frequently, let the sausage cook throughout. Sprinkle the dish liberally with salt and Pepper (I use about 1 tsp of each!).
Add the bell pepper chunks, letting them saute until softened (but still slightly crunchy!)
This is a really inexpensive meal, coming it at less at about $5 or less for the Entire Skillet full. This recipe can be easily adapted to serve more people, just increase the potatoes/sausage or both.
