MYO Garlic Cheese Bomb Bites

Bite-sized garlic poppers filled with melted mozzarella cheese, these are sure to be a hit with the entire family!

The following recipe calls for a can of cheapie refrigerated biscuits, but you can actually use any homemade bisquick recipe if you prefer, just roll the dough 1/4″ thick. If making your own biscuit dough, be sure to add 1 tsp of Italian seasoning directly to the mix for added flavor!

You’ll Need
1 (16 oz.) can refrigerated buttermilk biscuits (non-flaky) (The Super Cheap ones!)
5 mozzarella cheese sticks (cut into 4)
2 heaping tsp minced garlic
1/3 cup fresh parmesan, grated
1/4 cup (1/2 stick) unsalted butter
2 tablespoons fresh parsley, chopped
1 teaspoon Italian seasoning

Preheat oven to 400º F and line a baking sheet with a silpat or parchment paper.

Remove the refrigerated biscuits from the can, cut each one in half, then roll each half out until it’s 1/4-inch thick.

Place one mozzarella chunk on the edge of your dough strip, roll to completely envelope the mozzarella. Repeat, using all the dough.

In the microwave (or a saucepan) melt the butter and add the minced garlic, parmesan, parsley, and seasonings, mixing well. Brush each of the mozzarella dough balls with the mixture, or dunk them into it to coat, whichever you prefer. Bake 10 minutes (or until they reach a golden brown)

Immediately toss them with the remaining butter/cheese mixture and then serve immediately.
