One thing they haven’t managed to market yet during the fall season is pumpkin pie spice chips- but these buttery little morsels are bursting with flavor and add the perfect touch to fresh muffins, coffee cakes, scones, cookies and more.

Pumpkin Pie Spice Chips

You’ll Need:
2/3 cup sugar
3 tablespoons pumpkin pie spice
2 tablespoons butter, room temperature OR Vegetable Shortening (margarine is Not recommended)
2 tablespoons corn syrup (light or dark)
1/4 teaspoon vanilla extract

Combine the sugar and pie spice, mixing well then add the butter, corn syrup and vanilla extract. Mix well until all the ingredients are completely incorporated.

Next, spread the mixture into the back of a raised cone baking mat. They have these on Amazon for about $5-6. They work perfectly for creating perfect shaped baking chips.

Use the back of a spoon to spread the mixture out completely.

Then bake in an oven that has been preheated to 200F for about 35 minutes. Remove from heat, cool completely, invert the baking sheet and the chips will pop right out.

Store in an air-tight container for up to 1 week. If you want to store them longer, use vegetable shortening, not butter.

If you do not have a silicone baking mat, simply roll the mixture out about 1/4″ thick on a piece of parchment paper, bake 35 minutes, let cool until it is cool enough to handle and form small chips with your fingers. Or alternatively, cut them into squares. (The non-stick cone baking sheet is much easier!)

Please don’t try to substitute Coconut oil in this recipe, it fails.

To use: add the chips to your favorite batter or recipe. Be sure to gently fold them into the batter or mix last as they may break or crumble.
