Blueberry Muffin in a Mug Mix

You’ll Need:
¼ cup All Purpose flour
1 Tbsp brown sugar
¼ tsp baking powder
â…› tsp salt
â…› tsp cinnamon

Combine flour, brown sugar, baking powder and salt, mixing well. Place this mixture in a baggie & label with the finishing directions. This makes 1 pkg of Mix.

To make 1 Blueberry Muffin:

You’ll Need:
1 Pkg of Muffin in a Mug Mix (as listed above)
1/2 Tbs Butter
2 Tbs Milk (or Almond Milk)
2 Tbs. Blueberries (fresh or frozen)

Spray a microwave-safe mug with non-stick spray.

In the prepared mug combine muffin mix, butter, and milk, mixing well until just combined. Add blueberries, stir gently. Avoid overmixing to prevent the muffin from becoming tough.

Microwave on high for 60-90 seconds. Serve with a pat of butter or drizzle of maple syrup.

Alternative: Gluten Free Blueberry Muffin in a Mug

You’ll Need:
¼ cup Oat flour **
1 Tbsp brown sugar
¼ tsp baking powder
â…› tsp salt
â…› tsp cinnamon

(to make your own oat flour, blend quick-cooking oats in a blender until finely powdered)

Combine flour, brown sugar, baking powder, and salt, mixing well. Place this mixture in a baggie & label with the finishing directions. This makes 1 pkg of Mix.

To make 1 Blueberry Muffin:

You’ll Need:
1 Pkg of Muffin in a Mug Mix (as listed above)
½ Tbsp Coconut Oil (or Butter)
2 Tbsp Greek Vanilla Yogurt
1-2 Tbsp frozen blueberries

Spray a microwave-safe mug with non-stick spray.

In the prepared mug combine muffin mix, coconut oil, and vanilla yogurt, mixing well until just combined. Add blueberries, stir gently. Avoid over-mixing to prevent the muffin from becoming tough.

Microwave on high for 60-90 seconds.

Serve with a pat of butter or drizzle of maple syrup.
