As a kid corn fritters were a “go-to” dirt cheap, frugal comfort food that mom would make when the cupboards were getting a bit bare and money was too tight to shop.
They’re lightly sweet with delicious creamed corn and crispy bites of ham.
They’re still a favorite of mine, but now we add a bit of ham and a fresh shallot too!
Corn Fritters with Ham & Shallots
You’ll Need:
1 1/4 cups all-purpose flour
1 cup creamed corn
3/4 cup ham, diced
1/2 cup whole milk
2 large eggs
1 shallot, diced
1 tablespoon olive oil
1 1/2 teaspoons baking powder
Himalayan Pink salt and freshly ground pepper, to taste
canola or vegetable oil, for frying
Whisk flour, baking powder, salt and pepper in a small bowl and set aside.
In a small saucepan, saute the shallot in 1 TBS of HOT olive oil until lightly browned. Add the diced ham and heat with the shallots until lightly browned.
Heat about an inch of oil in a Fry Daddy, Fryer or Heavy Saucepan until it hits 365-375F
While the oil is heating, Combine Milk and eggs in a large bowl, whisking, then add the flour mixture. Fold in the creamed corn, ham and shallot until incorporated.
When the oil is ready, drop large spoonfuls of corn mixture into hot oil and fry for 2-3 minutes (per side), or until golden brown.
Remove to a paper towel-lined plate to drain, then serve hot.
