If you loved those delightful Lil’ Debbie Oatmeal Creme pies as a kid, you’ll really love this money saving recipe. These delicious morsels can be made at home, freeze well and will make any kid light up when they find one in their lunch bag.
The boxes of snacks aren’t in the budget for us, the size of the snack is shrinking while the cost is steadily rising! Here’s a recipe that is so close in flavor, if you close your eyes, you won’t be able to taste the difference.
Copycat Lil’ Debbie Oatmeal Cream Pies
You’ll Need:
2 cup uncooked Quick Oats
1 1/2 cup Flour
1 tsp Baking Soda
3/4 tsp Cinnamon
1/4 tsp Cloves
1 cup Brown Sugar
1/2 cup Sugar
2 1/2 sticks softened Butter (1 1/4 cup)
1 Egg
2 tsp Vanilla
1 tbsp Molasses
Filling:
1/2 tsp Salt dissolved in 4 Tsp Hot Water
14 oz Marshmallow Creme
1 cup Shortening
2/3 cup Powdered Sugar
1 tsp Vanilla
Preheat the oven to 375° F
Line a baking sheet with a Silpat or parchment paper and set aside.
For the Cookies
In a medium bowl combine flour, pats baking soda, salt, cinnamon and cloves, mixing well until the ingredients are combined, set aside.
In a large mixing bowl cream the butter, brown sugar, sugar and vanilla together until smooth and creamy. Beat in the egg and molasses. If you don’t have molasses you can substitute honey in a pinch.
Add the dry ingredients to the butter mixture, mixing just enough to incorporate, but don’t overmix.
Drop dough about 2″ apart on the prepared cookie sheets. We use a cookie dough scoop which is approximately 2 Tbs of dough at a time. You can make your cookies as big or small as you like, that’s the point of homemade.
Bake for 8-10 minutes. Let them cool before filling.
To Prepare Filling
In a mixing bowl beat marshmallow creme, shortening, powdered sugar and vanilla until smooth and fluffy, add the cooled salt water mixture and beat again.
Spread the filling as thick or thin as you prefer on the flat side of a cooled cookie and top with another to create an Oatmeal Creme Pie Sandwich.
Makes 22-24 Large Sandwiches

Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper or a Silpat.
For the Cookies:
