Brandied Peach Compote

Sometimes in the summer months when fruits are in season we want to enjoy the flavors in full, but alas, the summer heat makes us want to run from the kitchen! Here’s a delicious sinfully simple brandied peach compote/pie filling recipe that can be tossed in the slow cooker.

The hardest part of this whole recipe is peeling and cutting up the fresh peaches (real tough, huh!).

You’ll Need:
8 ripe peaches, peeled and diced
1/2 cup plain white sugar
1/2 cup brown sugar
1/3 cup brandy, optional
1/4 cup (1/2 stick) butter, cut into pats
1 teaspoon cinnamon
1 teaspoon vanilla extract

Place the prepared peaches in the slow cooker, add the sugars, cinnamon, brandy and vanilla extract, mix well to coat the peaches. Place the pats of butter on top of the peaches. Cover and cook on low about 2 hours.

Serve this delightful compote over ice cream, puff pastry squares, shortcake biscuits or use it as a pie or muffin filling.

If you’re wondering, this recipe freezes very well.
