Layered Margarita or Irish Cream Bites

If you like margaritas, you’ll adore this delicious layered margarita bite recipe that can be divided into shots or as a layered adults-only dessert!

Recently while camping with friends we decided to have a Mexican theme meal one evening. This was the easiest “shot” to throw together and didn’t require much ice to complete.

In honor of St. Patrick’s day we offer a second recipe for making this one a bit more Irish! This is a very versatile recipe, quick to throw together and very smooth- so it’s easy to eat too many!

This recipe calls for fresh lime juice, here’s a simple technique to get the maximum amount of juice from each lime:

Mexican Fiesta Flavor
You’ll Need:

1 3/4 cups boiling water
1 pkg. (6 oz) JELL-O Margarita Flavor Gelatin OR LIME flavored
3/4 cup tequila
zest and juice from 1 lime (about 2 Tbs)
2 cups thawed COOL WHIP Whipped Topping

Dissolve the gelatin mix in a bowl with the boiling water. If you want to make this quick and easy, just run a pot of water through your coffee pot, it’s the perfect temperature.

Once the gelatin has dissolved, add the tequila, lime juice, and half the zest. Fold in the cool whip, do not overmix.

Pour into shot cups that can be covered or into 4 oz glasses (as pictured) Refrigerate until the layers divide and set (about an hour).

Top with Whipped Cream and a sprinkle of lime zest.

Makes 6 (4oz) Margarita Desserts or 24 (1 oz) layered Margarita Bites

St. Patricks Day Irish Cream Bites

You’ll Need:

3/4 cup Irish Cream Liqueur
zest and juice from 1 lime (about 2 Tbs)
2 cups thawed COOL WHIP Whipped Topping
