Make your own delicious, healthy blueberry granola popsicles- the frozen treat that you can actually serve the kids for breakfast! A burst of protein, plump juicy berries and a bit of crunchy granola make these a summer fave for all ages!
Depending on whether you’re watching your fat intake or not, you can opt for lowfat plain yogurt if you wish. We prefer vanilla as it imparts a lovely contrast to the blueberries, bringing out their flavors a bit more.
You’ll Need:
2 cups vanilla Greek yogurt (or low-fat plain)
1 cup Fresh blueberries
1/2 cup granola (we love Aldi’s Flax Seed Granola!)
1 tablespoon honey
popsicle molds/sticks
Dump blueberries into a small bowl, add honey, stir to coat, gently pressing to release some of the juice.
Pour some of the Greek yogurt into the popsicle molds, add a spoonful of berries (with the juice, add more yogurt, repeat, creating light layers.
Evenly distribute granola over the tops of the popsicles and insert popsicle sticks.
Freeze overnight. To loosen frozen popsicles from molds, place the mold under warm running water for 10 seconds (or) until popsicles slide out easily.
