Curried Rice Mix in a Jar

Curried Rice Mix is a simple, make ahead mix recipe that can be stored in a mason jar, vacuum sealed in bags for easy, pest free storage, or added to gift bags or baskets for a delicious gift.

As a side dish for lamb, chicken or pork entrees, it serves as a flavorful accompaniment the entire family will enjoy. If you want a middle eastern flare for dinner, serve it with the Tandoori chicken recipe.

1 cup long-grain rice (or broken vermicelli pieces, or a combination of the two – as desired)
1 chicken bouillon cube, crumbled
2 tablespoons dried minced onion
1/4 cup raisins
1/2 teaspoon Madras curry powder (Hot or Mild, as desired)

Layer the ingredients in the order given in a 1 1/2 cup jar. (Makes the equivalent of 1 package of Mix).

Attach these instructions to the jar:

Curried Rice:
2 1/2 cups water
1 Curried Rice Mix

In a medium saucepan bring the water to a boil. Add all the rice mix. Cover and reduce the heat to a simmer for 20 minutes, add up to 1/4 c. of hot water as needed.
