Light Caesar Salad Dressing

Caesar Salad is quite popular but it gets it’s rich flavor from raw egg yolks and anchovies! Feeling a bit squeamish about the yolks and fishies? No worries, here’s a light version that still offers plenty of flavor…
It might interest you to know that the creator of the caesar salad, Caesar Cardini, actually did NOT put anchovies into the salad, in fact he was quite opposed to the idea of it. The slight anchovy flavor was actually due to his use of Worcestershire sauce in the dressing.

You’ll Need:
1 c. grated Parmesan cheese
1 tsp garlic powder
1 tsp salt
1 tsp black pepper

Mix the above listed ingredients and add them to the following:

1 cup light mayonnaise (or greek/plain yogurt)
¾ cup low fat milk
1/2 Tbs dijon mustard
1/2 Tbs Worcestershire Sauce
2 T lemon juice

Beat all ingredients together until smooth and creamy. Chill for 15 minutes prior to serving. Serve over a salad consisting of romaine lettuce, croutons, a bit of freshly crushed garlic and diced hard-cooked egg pieces. (Of course, any other veggies you’d like to toss in there would be delicious as well!)
