There are a number of gluten free grains that can be used to make an all purpose flour, here’s one of our favorite blends. . .
You’ll Need:
2 cups sorghum flour
2 cups brown rice flour
1 1/2 cups potato starch, not potato flour
1/2 cup white rice flour
1/2 cup sweet rice flour
1/2 cup tapioca flour
1/2 cup amaranth flour
1/2 cupquinoa flour
Sift each ingredient into a large mixing bowl. Mixing well with a whisk to fully incorporate all of the flours together.
This mix stores best in the fridge, but can be stored in the pantry in a cool, dark place.
