MYO Breakfast Sausage – Country or Maple

Sausage is a favorite for breakfast, but did you know that it’s super easy to make your own? I have been using this recipe for years and our family just loves it!

Country:

Recipe: Per 3 lbs ground pork- (I grind my own, and use boneless sirloin chops, untrimmed. Make sure that meat is as cold as possible before grinding up.)

2 tsp salt
1/8 tsp sage (or Poultry seasoning)
1/8 tsp thyme
1/4 tsp rosemary
1 Tbsp brown sugar
2 tsp black pepper
1 pinch pepper flakes
1/8 tsp garlic powder
1 small onion (Or 2 tsp onion powder)
1/4 c apple cider vinegar (or white if that is all you have.)

Mix together all seasonings and pork. Portion out and freeze. (You can shape if you like, or do as I do and use a large ice-cream scoop to measure out portions per person.)

 

For Maple:

3 lbs pork (ground)
2 tsp sage
2 tsp salt
1 1/2 tsp black pepper
1/4 tsp dried Marjoram
3 Tbsp Maple Syrup
Pinch Pepper flakes
Pinch to 1/8 tsp ground cloves
1 small onion (Or 1 1/2 tsp onion powder)

Mix all well. Portion and freeze.
