Barbecued Meatball Dinner

Utilizing the slow cooker during the hot summer months is a must for busy families. Here is a simple barbecued meatball dinner idea that can be thrown together in the crockpot and be ready for dinner with minimal hassle.

You’ll Need:
1 pkg frozen meatballs — or make your own with this tried and true recipe that we love!

1 cup ketchup
1 cup packed brown sugar
6-oz tomato paste
1/4 cup reduced-sodium soy sauce
1/4 cup cider vinegar
1 tsp hot pepper sauce, or more, to taste

In a medium bowl combine ketchup, brown sugar, tomato paste, soy sauce, vinegar, and hot pepper sauce, mixing well. Dump the meatballs (frozen and all!) into the slow cooker, Pour the sauce over meatballs. Cover and cook on LOW 4 to 5 hours.

Once you’re ready for dinner, place a heap of hot cooked (Jasmine or Brown rice!) in the middle of the plate, add the meatballs and serve with a side salad or steamed veggie.

This makes a hassle free, very easy dinner on a busy weeknight. For even less hassle, make the rice ahead of time and freeze it. It can be reheated quickly (add a couple tablespoons of water when you reheat it!).
