Butterscotch Snack Cake

Here is a simple recipe for butterscotch snack cake that will knock your socks off. This can be made as a cake and frosted or left plain. I tend to like my snack cakes plain. I usually bake this as cupcakes as they are easy to freeze and the kids actually eat them frozen. I pack them in my lunchbox or let them thaw for about 15 minutes but the kids just can’t wait that long.

You’ll need 1 box yellow cake mix
The ingredients for the cake mix ie eggs water oil
1 box instant butterscotch pudding
1 cup butterscotch chips (optional)

Mix cake according to package directions, add boxed pudding, and butterscotch chips if you are using them, mix well and bake according to the back of the cake mix box. Cool and serve.

Freeze muffins in a large freezer safe plastic bag or container, or cut pieces of cake and wrap and freeze for an easy to serve snack. I have fallen in love with the little silicone muffin cups. They are so fun to use, but I always forget what a pain they are to clean and put away. I think I’ll stick to my plain old muffin pan next time. Even though they are a cute flower shape….

That’s all there is to it. I have seen complicated recipes that have a million ingredients but when I find one that works, I tend to stick with it. this one is simple enough even the kids love to make it, and there is just something about a butterscotch cake that just makes everything right. It’s definitely not an everyday flavor of cake you might make but it will definitely become one you make over and over again once you try it.

You could also melt the butterscotch chips along with chocolate chips and use that as a glaze. Yum!
