Part of the thrill of gardening is turning those plump tender tomatoes into fine culinary delights. Traditionally speaking, Bruschetta is an antipasto of grilled bread that has been rubbed with garlic, then topped with freshly chopped tomatoes, olive oil and seasonings. These bites of bruschetta take it just one step further…
For the Bruschetta You’ll Need:
3-4 regular tomatoes (about 2 lbs)
1 clove garlic minced
1/4 cup fresh basil, chopped
2 Tbs Olive oil
1 Tbs red wine vinegar or quality balsamic vinegar
1/2 tsp each salt & pepper (or to taste)
For the Bread You’ll Need::
3 Tbs Olive oil
2 cloves finely minced garlic
Fresh Parmesan Cheese (optional)
Dice the tomatoes and place them in a medium size bowl. Sprinkle the freshly chopped basil over the top, add the garlic, season with salt and pepper. Drizzle the red wine vinegar and olive oil over the top and then gently fold to combine all the ingredients.
Cover and let the flavors marry for about 2 hours. (No need to refrigerate).
Combine the olive oil and minced garlic Slice the baguette diagonally, brush lightly with olive oil and minced garlic and toast lightly.
Immediately top the warm toasted slices with Fresh Garden Bruschetta and sprinkle with freshly grated parmesan cheese!
