Sesame Green Beans with Mushrooms and Chestnuts

Looking for amazingly simple, yet delicious side dish? Look no further, these fresh green beans are tossed with sesame oil, sauteed with mushrooms and chestnuts and perfectly seasoned for a flavorful, healthy dish that is perfect with any grilled meat, or as a vegetarian dish served over freshly steamed rice.

You’ll Need:

5 oz button mushrooms, sliced
2 tsp canola oil
2 tsp sesame oil
3/4 lb of green beans, ends trimmed
1 small can of sliced water chestnuts (liquid drained)
2 small cloves of garlic, minced
2 tbsp water
4 tsp soy sauce
2 tsp sugar
Sea salt and freshly cracked pepper, to taste
Sesame seeds

Heat both the olive and sesame oil over medium heat in a large skillet. Dump the sliced mushrooms into the hot oil and cook for 2 minutes on each side, undisturbed to let them brown.

Add the garlic, green beans, and water chestnuts; season with sea salt and freshly cracked pepper. In a small bowl Combine the water, soy sauce, sugar, mixing well, then pour the sauce over the hot vegetables, cooking the green bean mixture for 3-4 minutes, or until the green beans and tender-crisp. Remove from the heat and serve with sesame seeds sprinkled on top, season lightly with additional sea salt and cracked black pepper.
