Lemon Cake Mix in a Mug

Lemon Cake in a Mug

8 (1 1/2 to 2 cup) microwave-safe mugs
1 (18.25 ounce) box lemon cake mix
1 small box lemon instant pudding mix

Combine ingredients and measure 1/2 cup of mix into a small zip-type bag. Label as “Cake Mix.”

Glaze Mix:
1/3 cup confectioners’ sugar
1 1/2 teaspoons powdered lemonade mix

Place into a small zip-type plastic bag. Label as “Glaze Mix.” Attach to the cake mix bag with a twist tie.

Place into a 1 1/2 to 2 cup microwave-safe mug.

NOTE: The Glaze Mix ingredients are for 1 cake, so you will have to make a batch for each mug you are giving.

Lemon Cake

Mist inside of coffee mug with cooking spray. Empty cake mix into cup. Add 1 egg white, 1 tablespoon vegetable oil and 1 tablespoon water. Mix well. Microwave on HIGH for 2 minutes.

Empty Glaze Mix into a small bowl and add 1 teaspoon water. Mix well. Pour glaze over baked cake.
