(Almost) Red Robin Strawberry Lemonade

If you’ve ever tasted the nectarous sweetness of fresh lush strawberries and sweet-tart lemonade combined for a flavor burst of spring, you’re in for a treat! Red Robin Strawberry Lemonade

You’ll Need:
The Zest of 1 Lemon, cut into strips
2 c. Sugar
2 c. chopped (hulled) strawberries
2 c. Fresh Lemon Juice
1/4 tsp salt

To begin, Make the lemon syrup:

In a medium-sized saucepan, combine the lemon zest, 1 1/2 cups sugar and 1 1/2 cups water to a boil, stirring occasionally until the sugar dissolves. Remove from heat and let cool to room temperature. While the syrup is cooling, make the strawberry syrup.

In a small bowl Toss the strawberries and the remaining 1/2 cup sugar together mixing well. Set it aside and let it rest until the sugar naturally dissolves in to the juices of the berries, about 45 minutes.

Carefully strain the strawberry mixture, reserving the strawberry syrup and berries separately.

To Make the lemonade:

Combine the lemon juice, lemon syrup, salt and 2 cups ice cold water in a pitcher.

To make the Strawberry Lemonade, fill a tall glass with ice, add 1 tablespoon of the strawberry syrup and then top with the lemonade and a spoonful of the reserved sweetened strawberries. Stir gently and enjoy!
