Lemon-Oatmeal Pancake Mix

Lemon oatmeal pancake mix is a fantastic make-ahead mix for those moments when you’d like something a little different for breakfast, or if you’d prefer, try our lemon poppyseed pancake mix!

Lemon Oatmeal Pancake Mix

2 cups all-purpose Quick baking mix (This is a copycat Bisquick Mix)
1/2 cup nonfat milk powder
1/2 cup quick-cooking oats
2 TBSP sugar
2 tsp. grated Dried lemon zest

Combine all ingredients in a bowl mixing well, then transfer to a quart mason jar or ziploc bag, for storage. Attach a label to complete the recipe.

YIELD: about 3 cups mix.

TO SERVE:
Whole Recipe (12-14 pancakes):
3 cups pancake mix
1-3/4 cup water
2 slightly beaten eggs

In a bowl combine eggs, water, and pancake mix, stirring just until moistened.
Cook as you would any pancakes.

To make 6-8 pancakes:
Use 1-1/2 cups mix
3/4 cup water
1 egg

To make (3-5 pancakes):
Use 1 cup mix
6 Tbs water
1 egg

Lemon Poppyseed Pancake Mix

2 c. all purpose flour
3 Tbs granulated sugar
1 Tbs baking powder
½ tsp salt
1 ½ Tbs poppy seeds

Combine all of the ingredients together in a ziploc bag or covered container and attach the finishing directions. This makes one batch of mix.

To Make Lemon Poppyseed Pancakes

1 Batch of Lemon Poppyseed Pancake Mix (see above)
zest of 1 lemon
3 egg whites
1 ½ c. milk
2 Tbs vegetable oil
1 Tbs butter melted
2 Tbs lemon juice

Dump the batch of lemon poppyseed pancake mix into a large bowl.
In a small bowl, combine milk, oil, melted butter, lemon juice, poppy seeds, and lemon zest, mixing well, then pour the mixture into the poppyseed pancake mix. Mix until combined.
Beat egg whites until soft peaks form. Fold the egg whites into the batter, don’t over mix.
Let them rest while the griddle is heating. Pour the batter about 1/4 cup at a time onto a buttered hot skillet or griddle. Wait for bubbles to form, then flip.

Pancakes should only ever be flipped one time, otherwise they lose their fluffiness. Drizzle with lemon poppyseed glaze.

Lemon Poppyseed Glaze

2 c. powdered sugar
3-4 Tbsp. lemon juice
½ tsp. poppy seeds

Combine the ingredients, blending well until smooth. Use this delicious zesty glaze to drizzle over fresh, hot, lemon poppyseed pancakes.
