Honey graham crackers are a time-honored classic, but chocolate grahams are a delightful treat that are often difficult to find at the local grocery store. Here is a simple homemade chocolate graham cracker recipe that are delicious on their own or in your favorite recipes calling for chocolate grahams.
How to Make Chocolate Graham Crackers
Old-timey recipes often call for graham flour, but these days you won’t see that on the shelves at your favorite grocery store. To be fair, Graham flour is nothing more than Whole Wheat flour, so if your recipe calls for graham flour, rest assured, all you need is regular whole wheat flour found in any decent grocery store. Do not, however, use gram flour (which is made from chickpeas).
In a large mixing bowl combine the flours, salt, cocoa, sugar, and baking powder.
Using a pastry blender, your fingertips, or a couple of butter knives, cut the butter into the flour mixture resembles crumbs.
In a small bowl combine the honey and milk, stirring until the honey dissolves, then add the liquid to the dry ingredients and toss lightly with a fork until the dough comes together.
Turn the dough onto a well-floured surface and fold it over gently until smooth.
Divide the dough in half, working quickly, roll out the chocolate graham dough.
Put your half of dough onto the parchment paper or Silpat, and roll it into a rectangle, until the dough is only about 1/16 of an inch thick.
Trim the edges with a pizza cutter, if you’re worried about having “pretty crackers” and prick the dough evenly with a fork. Repeat with the remaining half of dough on the other piece of parchment. Transfer the silpat or parchment paper onto a baking sheet.
Bake for 15 minutes or until they begin to brown. Immediately cut them into rectangles with a pizza wheel or knife. Transfer on a rack to cool. They will crisp as they cool.
These chocolate graham crackers are perfect to use in dessert lasagna recipes, such as pumpkin tiramisu.

This recipe can be made ahead of time as Chocolate Graham Cracker Mix in a Jar by combining all of the dry ingredients into a jar and then attaching a label directing the user to add a stick of butter, milk, and honey. To the mix, then add the remaining directions as listed above to finish them.
