Make your own healthy, delicious crunchy chocolate pecan granola- an excellent topping for fruit and yogurt parfaits, ice cream, or even as breakfast cereal.

You’ll Need:
3 cups quick cooking oats
1 1/2 cups flaked coconut (sweetened or unsweetened, doesn’t matter
2 teaspoons poppy seeds
1/4 cup cocoa powder
1 cup chopped pecans
1/4 cup plus 2 tablespoons honey
1/4 cup plus 2 tablespoons coconut oil
3/4 teaspoon salt

Preheat oven to 250º.

In a medium size bowl combine oats, coconut, poppy seeds and pecans, mixing well.

In a small glass dish combine honey and coconut oil, heat in microwave about 20 seconds, just long enough to melt the coconut oil. Stir until smooth, add salt and cocoa powder.

Pour the chocolate honey mixture over the oats/coconut/pecan mix and stir well until thoroughly mixed.

Spread evenly on baking sheet. Bake for 1 hour and 20 minutes, stirring about every 20 minutes.

Serve layered in yogurt, as cereal in milk, with fresh or dried strawberries- cherries-blueberries etc, over ice cream, etc.

This very versatile recipe offers a healthy choice for granola that is loaded with flavor. If you want to increase the omega 3’s use chia seeds in place of the poppy seeds.
