Move over Betty Crocker, here comes a simple do it yourself, make at home Super Fudge Brownie mix that only requires water before it hits the oven and bakes into mouth-watering scrumptious Thick Chewy Fudge Brownies!
These thick super fudge brownies are a favorite around here- but with our youngest heading back to college shortly, we wanted to come up with a recipe that he could use away from home, where his “kitchen” is extremely limited.
This make-ahead MYO Super Fudge Brownie mix only requires the addition of 1 simple ingredient before it heads to the oven… Water!
Super Fudge Brownie Mix
You’ll Need:
2 cups sugar
1 1/3 cups all Purpose Flour
1 cup unsweetened cocoa powder
3/4 teaspoon salt
1/2 cup Solid All-Vegetable Shortening (such as Crisco)
2 tsp Vanilla Powder
1 tsp baking powder
4 Tablespoons of Chia Seeds OR Ground Flaxseed/Flaxmeal OR Just Whites (Powdered egg replacer) (NOT ALL- Use 1 OR the other!)
1 cup chopped nuts* (optional)
1/2 c. Chocolate Chips or Butterscotch Chips, Andes Chocolates (optional)
In a large mixing bowl combine sugar, flour, cocoa powder, salt and vanilla powder mixing well. Cut in the shortening and mix until the mixture resembles fine crumbs. Add the chia/flax/powdered eggs and mix well. If you want add the chopped nuts and chocolate chips or candy bits. Makes 2 small batches of brownies or 1 large batch.
To Make 1- 8×8 Pan Brownies
3 cups of Mix
6 Tbs Water
Combine the mix and the water in a bowl and mix well. It will seem too thick at first, but just mix it in! Transfer into an 8×8 baking dish that has been sprayed with non-stick spray. Let it sit 5-10 minutes on the counter while the oven is Preheating. Do not skip this step. bake at 350 for 25-30 minutes
To Make 1- 9×13 pan brownies
6 Cups Mix
3/4 c. Water
Combine the mix and the water in a bowl and mix well. It will seem too thick at first, but just mix it in! Transfer into a 9×13 baking dish that has been sprayed with non-stick spray. Let it sit 5-10 minutes on the counter while the oven is Preheating. Do not skip this step. Bake at 350 for 35-38 minutes
This mix can be stored for up to 6 weeks in the Pantry.

i made these and we really enjoyed them! the next time i’ll add chopped chocolate bits or chocolate chips to them to give them an added burst of chocolate. dh wanted me to put in some chopped maraschino cherries, he loves cherries in brownies.

Regarding the question asking if vegetable shortening can be substituted, I have substituted it with applesauce in all recipes that call for any kinds of shortenings and cooking oils and it works well, you can’t even tell all the deserts taste great.

what do the chia seeds or ground flax seeds do in this recipe? i’m allergic to egg white, so wouldn’t be able to use that, but have never used chia seeds or ground flax seeds and am wondering if they are essential or could be eliminated from the recipe without any real problems? thanks!

I don’t know about the chai seeds, but the ground flax seeds (mixed with water) can be used as an egg replacement in recipes. I hope this sheds a little light for you ~
Chia seeds are gelatinous when they soak up moisture from a recipe, or water.
They thicken and emulsify like ground flax seeds or egg replacement.
i have never heard of replacing egg with flax seeds. do they have to be ground up first? where do you buy them?
Grocery stores, Walmart. If it says milled, then you don’t have to ground them.
is there a replacement for he solid shortening?
Yes, you could use solid coconut oil.
Or, omit the shortening and then when you get ready to bake use applesauce instead. It will have a different texture, more fudge-like.

i make a similar mix to this with the one major difference being that i use ‘black cocoa’. i buy it at a bulk food store locally and it makes all the difference in the world! i have people calling to request me to make them for various events they are required to take a dish.
my kids are almost sick of their school mates demanding they bring these to any pot lucks it is requested so often. (almost as much as baked mac and cheese)
my mix does not have chips in it, but i will often find a chip in a seasonal flavor and sprinkle on top for special events. (candy cane flavored ‘choc chips’ like drops at christmas…)
this recipe looks great. i’m always craving brownies but forget to buy the package mixes. love my4maincoones’ idea of adding cherries.

these sound really good, i will make them for my grandchildren. i use flax seed and chia in my bread making to give it that extra nutrition.
I have used chia seeds for egg replacement, sprinkled on pudding and yogurt, and great in salads.
This brownie picture looks better than the box mix real thing.
To substitute the shortening, I use coconut oil instead (1/2 what’s called for)

When I read the recipe a while ago. I realized I had everything but the cocoa powder, I only had the dark chocolate cocoa powder and used gluten free flour. These were very good!
They turned out black, like a dung pile, instead of brown. I don’t care, they were awesome with the texture and flavor than the salty box mix. I will never buy another brownie mix again.

I have used chia seeds for egg replacement, sprinkled on pudding and yogurt, and great in salads. They were just as good in the brownies.

I use coconut oil in place of shortening.

If I wanted to use egg white at time of cooking instead of using powdered egg white/chia or flax seeds, how much egg white would I need for this recipe?

How can I extend the shelf life of 6 weeks? If I add the shortening when ready to cook will this extend the shelf life of the mix? And how much applesauce should be used in exchange of the shortening?
The same amount of shortening that they call for put in that much apple sauce. You can also use mayo and it makes them really moist. The same applies to the mayo and no you will not be able to taste the mayo at all.. mix well…
