If you’ve never had 3-2-1 Cake, you’re in for a treat! All you need to make this delicious carrot cake in a mug mix is 3 Tablespoons of the mix, 2 Tablespoons of water and 1 minute in the microwave- for a delectable instant dessert.
This particular recipe is great for summer snacking, college students who have limited resources in their dorm rooms etc. These single servings take almost no time to prepare and make an easy light snack or dessert.
You’ll Need:
1 Angel Food Cake Mix (Whatever brand)
1 Carrot Cake Mix (Duncan Hines or Betty Crocker, etc)
Combine the 2 mixes in a large bowl mixing well. Transfer to a sealed container, mason jar, Ziploc baggies, etc and label it as 3-2-1 Carrot Cake mix.
Now, here comes the really difficult part. To prepare the cake, spray the inside of a coffee mug or 1/2 pint mason jar with non-stick cooking spray, add 3 Tbs of Mix, 2 Tbs of water and stir well to blend. Cook on high for 1 minute in the microwave, cool for at least 1 full minute or so before eating.
Frost it with cream cheese frosting, if desired prior to serving.
To make a simple cream cheese frosting combine 4 oz of cream cheese and 1/2 c. powdered sugar, 1 tsp vanilla extract in a small bowl. Beat with a hand mixer until smooth. This will store 7-10 days in the fridge with no problems.
