What could be better than luscious fresh strawberries filled with sweet, creamy cheesecake filling? These delicious Strawberry Cheesecake bites are the perfect, no mess finger food for snacking or summer parties.
During the spring and summer months we have a tendency to gather with friends for a wide variety of occasions, floatillas on the lake, pontoon parties, beach grilling, even a few weeknight gatherings here and there during the work week. As such, I like to keep a varied selection of “go-to” recipes that can be whipped up and thrown together within a very short period of time.
Although loaded with flavor, this recipe is only 4 simple ingredients. Although it’s already fairly low in fat and calories, you can reduce them further by using neufchatel cheese in place of the cream cheese.
You’ll Need:
1 (8oz) pkg Cream Cheese
1 c. Confectioners Sugar
1 tsp vanilla extract
2 lbs Fresh Strawberries
In a large mixing bowl beat the cream cheese and confectioners sugar together until smooth and creamy. Beat in the vanilla. Transfer the cheesecake filling into a frosting bag with a tip of your choice. If you don’t happen to have a frosting bag, you can transfer the filling to a ziploc baggie. Cut the tip of the corner off the baggie and use it to fill your strawberries.
Slice the very tip top off the strawberry (just the green!).
Using a knife tip or a the tip of a carrot peeler (which works great!) carefully cut out the center of the strawberry.
Remove the center piece of the strawberry:
Pipe the filling into the center of the strawberry:
Repeat until all the strawberries have been filled

very attractive and delicious. sugar substitutes and low/ non-fat cream cheese work in this recipe. makes it a great choice for serving to anyone on a restricted diet.
what a great way to have my strawberry cheese (cake) with out the crust! i love the taste of strawberries and cream cheese but hate the after effects of eating the crusts in cheese cake. this is definitely a winner!
any tips for filling them for a klutz that blows a whole in the frosting bag? i usually end up with a mess! 🙂 delicious, just messy!

just use a ziploc bag with the corner nipped off, it shouldn’t bust, and will work just as well.
i’m going to try this, and im going to crumble grhamcrackers up and sprinkle on top.
i’m not sure what i did wrong, with so few ingredients, but my filling turned out too runny. i tried to thicken it with more sugar but it didn’t help much. i put them in the freezer for about 5minutes then the fridge.
Still too runny, but tastes good nonetheless.
i can’t wait to try this i am a huge strawberry fan and cheesecake so this would be the best of both worlds

you could also add crumbled graham crackers on top..
i used this filling in raspberries too. you need a tinier hole in the baggie, but at least you don’t have to cut these berries! 🙂
