Delicately sweet with a hint of cinnamon and raisins, this simple bread pudding in a mug is a perfect single serving and takes only 3 minutes to prepare. It makes a lovely dessert, breakfast, or comfort dish any time.
If you happen to have a couple heels left over in a package of bread, this recipe is a perfect way to use them up.
3 Minute Bread Pudding in a Mug
You’ll Need:
2 slices Cinnabon Bread or any Cinnamon Raisin bread cubed
1 egg
1/2 cup milk
1 Tbs Brown Sugar (optional)
Crack egg into the mug, add milk and blend well with a fork. Add the cubed bread & stir gently to coat. Let it soak in and then stir gently again.
(Alternatively you could mix the egg and milk in a separate dish and pour it Over the cubes of bread, but then again, that creates more dishes and no one really wants that! Gently stir coating all bread. Sprinkle with brown sugar.
Place the mug in the microwave and cover well with a paper towel. Tuck the paper towel edges underneath the mug. Cook for exactly 2 minutes. Drizzle with syrup if desired & chow down!
The very first time I made this I did NOT cover the mug and I apparently also did not mix the egg into the bread very well because halfway through the cooking time I hit the floor when what sounded like an incoming BOMB blew in my kitchen.
While my children found the entire situation hilarious, my heart is still pounding and cleaning half cooked egg and milk out of a microwave wasn’t really on my list of things to do for the day.
This recipe adapted from the Bread Pudding Recipe submitted in our Forum by Sally Gordin, (thank you Sally!)
If you want to transform this into a dessert rather than a breakfast, you can drizzle it with caramel sauce.
Bread Pudding in an Air Fryer
If you’d prefer to make this in your air fryer instead of in the microwave, prepare the recipe as listed above in a lightly greased ramekin (rather than a coffee mug).
Cook in the air fryer at 350°F for 12-15 minutes, until the bread pudding is golden brown. Cool 2-4 minutes, then carefully remove it from the ramekin onto a serving plate.
Bread pudding is done when a metal knife inserted into the center comes out clean, or the internal temperature reaches 160°F.
