Salad dressings can be expensive, so here’s a copycat/make your own recipe for homemade Catalina Dressing- a classic sweet french-style dressing that really adds zest to salads that contain meat or fish.

You’ll Need:
½ cup + 1 TBSP. ketchup
1/3 c. water
¼ c. sugar
¼ c. white vinegar
2 TBSP. olive oil
¼ tsp. paprika
¼ tsp. coarse grind black pepper
¼ tsp. garlic powder
¼ tsp. cayenne pepper
1/8 tsp. onion powder
Pinch dried thyme

Combine all ingredients in a small sauce pan over medium heat. Bring to a boil, whisking often, then reduce heat and simmer uncovered, for 5 minutes. Cover the dressing until cool, and then pop it into the refrigerator to chill. Makes 1 cup.
