Create your own money saving homemade Sugar Free, additive-free Vanilla pudding mix to have on hand for delicious desserts.
Sugar Free Vanilla Pudding Mix
To make 1 Mix:
4 tsp stevia blend (or 3/4 tsp liquid; 1/2 tsp pure)
3 tbsp cornstarch
1/4 tsp salt
2/3 c. + 1 1/2 Tbs Dry Powdered Milk
(If you want to get fancy you can add the vanilla beans scraped from 1/2 a pod of vanilla bean in place of the vanilla extract below)
To Prepare the Pudding:
1 pkg of Mix (see above)
2-1/4 cups Cold water
1-1/2 tsp. vanilla.
In a heavy saucepan combine the mix and COLD water over medium heat, whisking constantly until mixture boils.
Boil for 1 full minute; whisking constantly. remove from heat. Stir in vanilla
Flavor Alternatives:
- Sugar Free Chocolate Pudding follow recipe except increase stevia to your taste preference, for us it was an additional 1/4 tsp and add 1/3 cup cocoa or 2 squares (2 oz) unsweetened bakers chocolate that has been finely chopped.
- Sugar Free Banana Pudding– reduce the Vanilla Extract to 1/2 tsp, add 1 tsp Banana Extract
- Sugar Free Coconut Pudding– once cooked add 1/2 c. Unsweetened Flaked Coconut
