In a large bowl combine cake mixes, oil and eggs until well mixed. Using a cookie scoop, drop the dough into balls about 2 ” apart on a cookie sheet. Flatten each dough ball. Bake for 12 minutes in a 325 oven that has been preheated.

While the cookies are baking, in a large bowl combine the cream cheese, confectioners sugar, and vanilla. If you’d like you can cut a pure vanilla bean in half and scrape the seeds out and add this in place of the vanilla extract. The little speckles impart a delicious flavor into the filling!Flattened chocolate cookie dough rounds on a metal baking sheet

Remove the cookies from the cookie sheet and cool them completely on a cooling rack before filling.

Fill with as much filling as you prefer, serve! These are so simple to make!
