Combine the flavors of fresh tomatoes and onions with a touch of Spicy Tuna for a healthy lunch loaded with flavor.

*1 package of any Ramen noodle (you won’t be using the seasoning packet)
*1 can of Campbells brand tomato soup, 1 can of water
*Half of a package of Starkist brand spicy&sweet tuna
*1 small tomato, diced
*1/4 cup of a white onion
*1 clove of garlic
*1 teaspoon of fresh ginger
*squirt of lime
*salt and pepper

Heat tomato soup and water for about a minute, then add broken up ramen (as broken up as you want). Cover and let simmer over low heat for about 3 minutes. Add tuna, tomato, onion, garlic and ginger. Stir and continue to cook for an additional minute. Add lime, salt and pepper to taste just before serving. Makes 1 large serving, or 2 small servings. Fast, tasty, and healthy 🙂

👩‍🍳 About the Author

Melissa "Liss" Burnell started Budget101.com in 2001 because she needed it to exist — not because she saw a market opportunity. She was feeding a family of four on under $200 a month, and people kept asking how, so she started writing everything down.

That turned into 25 years of recipes, debt-busting strategies, and DIY content — including figuring out how to make 128 loads of laundry detergent for less than $2. Millions of families have quietly used this site to stretch a dollar without feeling like they're sacrificing anything. She's also the author of two bestselling budget cooking ebooks, available on Amazon.
