Stir fry’s are notoriously healthy and fairly cheap to prepare. This delicious stir fry takes the cake, at only .41 per generous serving.
Ingredients:
• 2 packages Chicken Flavored Ramen Noodles
• ¼ cup thinly sliced celery
• ¼ cup diced red pepper
• ¼ cup diced red onion
• 1 cup broccoli florets
• 1 tsp crushed garlic
• 3 large eggs
• 1 tsp grated parmesan cheese
• 1 Tbsp olive oil
• 1 tsp butter
• Non stick spray
• Salt and pepper to taste
• Chili sauce (to taste)
Tools Needed:
• large saucepan
• large skillet
• two medium sized mixing bowls
• cutting board
• sharp knife
• strainer or colander
• measuring cups
• measuring spoons
• wire whisk
• fork
• serving platter
Directions:
Fill a large saucepan with water and bring this to a boil. While this is coming to a boil, prep and cut your vegetables. Once the water is boiling add the Ramen Noodles (without the seasonings) to the water. Use a fork to separate the strands of noodles. While the noodles are cooking, spray the skillet and preheat it. Once the skillet is heated add the onions and garlic and sweat them, then add broccoli and cook until bright green and starting to become tender. Add the additional vegetables and continue to cook until they start to soften but are still crisp. (While cooking the vegetables keep an eye on the noodles to make sure they do not boil over….they should only cook for about 5 minutes).
Once the veggies are cooked, remove them from the heat, pour them into a bowl and set aside. Remove the noodles from the heat and strain them. Rinse the noodles immediately under cool water to stop them from cooking and separate the strands.
Spray the skillet again and scramble the eggs until they are moist but cooked. Add the vegetables and stir them together. Add the noodles and the Ramen Noodles seasonings and stir fry them all together (turning the noodles over and over to incorporate the seasonings into the stir fry. Once all the ingredients are thoroughly mixed together and heated through turn them out onto a serving platter.
You can garnish the stir fry with a dusting of parmesan cheese and some fresh chopped parsley. Season to taste with additional salt, pepper and chili sauce.
Servings: 4 This stir fry can be used a quick lunch or as a side (as a side reduce the portion size). It is very economical and extremely easy to prepare. The serving cost (for four servings is only 41 cents per serving).

this is very similar to the pan fried noodles i make. there are two additions.
mince a 1 inch section of peeled fresh ginger root and cook that along with the onion and garlic.
When you get to the part where you add the noodles to the vegetables, drizzle some sesame seed oil to taste.
