Chicken, Ramen Noodle and Peanut Salad

This is a great salad – quick and easy to prepare and also easy on the wallet. To make it even easier on the wallet, substitute the vinaigrette with a bottled Asian-style vinaigrette that you purchase on sale!

2 packages chicken flavored Ramen noodles
1 cup peanuts
1 head Napa cabbage, shredded
1-1/2 cups shredded skinless rotisserie chicken, warm or at room temperature
4 scallions, chopped
3/4 cup peanut oil
1/4 cup red wine vinegar
1/4 cup loosely packed light brown sugar
2 teaspoons soy sauce
1 teaspoon toasted sesame oil
1 clove garlic, minced

Preheat oven to 350 degrees F.

Spread noodles and peanuts in an even layer on a large baking sheet. Bake about 8 minutes, or until lightly toasted.

Combine noodles, peanuts, cabbage and scallions in a large salad bowl, reserving 1/4 cup of noodles for garnish.

Combine oil, vinegar, sugar and sesame oil in a small saucepan over medium heat. Stir until sugar is dissolved and mixture is warmed through. Add garlic, stir 1 minute. Pour over salad mixture; toss to coat. Divide among 4 plates, garnish with remaining noodles and serve. Yield: 4 servings.
