Speedy G’s Mexican Sketti

This is a quick weeknite meal for two or pairs really well as a side dish for carne guisada for 4.

2 pkg of ramen noodles (any favor…flavor packet will not be used)
2 tbl of olive oil
1 can of tomato sauce
2 tbl of white sugar
1 table spoon of chili powder
1 tsp of cumin
1 tsp of mexican oregano
1/8 tsp of cayene
salt and pepper to taste
queso fresco to top

Heat skillet on med/high heat. heat olive oil in the skillet (should equal a couple of times around the skillet. while oil heats, break up noodles and place them in the skillet. add sugar to the noodles and oil. brown noodles in the pan by stirring consistently for about 2 minutes. reduce heat to med/low. While stirring add tomato sauce and spices. Once mixed well add the salt and pepper to taste. reduce to low and cover. Simmer for about 8- 10 minutes until noodles are soft and cooked. (simmer longer for a less soupy texture) Service as two big bowls or 4 sides. Crumble queso fresco on top if desired.

*1/2 a packet of taco seasoning can be used for a more economical version as well as replacing the queso fresco with any cheese on hand.
