Thai This ramen curry soup

If you like Thai food, you’ll love this Thai Ramen Curry Soup! Easily customizable with whatever veggies you have on hand

1 tbsp oil
1 garlic clove minced
1 tsp ground ginger
1 can chicken broth + 1 cup water and ramen season packet
2 tbsp soy sauce
1 tbsp curry powder
1 tbsp sugar
1 potato chopped in cubes
1 cup vegetables (mushrooms, carrots, spinach ect. or all three)
1 package ramen (desired flavor)
1 can coconut milk
1 green onion chopped
peanuts and chili flakes (optional)
siracha (optional)

In a pot heat oil med heat add garlic and saute for 30 sec stirring it making sure it doesn’t burn. Add chicken broth,ginger, water,packet,soy sauce,curry powder,sugar, potato, ramen, and vegetables. Bring to a boil then reduce to a simmer until noodles and vegetables are tender and potatoes cooked through. Add milk, stir and simmer one more minute. Serve in a cereal bowl topped with onions, peanuts and as much heat as you like! enjoy!
