Citrus Ramen Summer Salad

Need something a little bit different for your summer party? This Citrus Ramen Summer Salad offers a unique twist to otherwise boring pasta salads! Tangy mandarin oranges, fresh sliced mushrooms and slivered almonds are the key to a fresh, light salad.

Ingredients:
1 small head of favorite lettuce, chopped into bite-size pieces
6 green onions, chopped
1 (6 oz.) can Mandarin oranges
3/4 cup chopped celery
3/4 chopped mushrooms
1/2 cup slivered almonds
1 (3 oz.) pkg chicken flavored Ramen noodles, uncooked and crumbled
salt and pepper to taste
1/4 cup vegetable oil
1/2 tsp. fresh ground black pepper
1 tablespoon white vinegar
Seasoning mix from noodles

Directions:
In a large bowl, mix together the lettuce and green onions. Add the oranges, celery and mushrooms. Mix well and set aside.
In a smaller bowl, combine the salad oil, pepper, sugar, vinegar and seasoning mix. Add the dressing, almonds and Ramen noodles to the lettuce mixture. Season with salt and pepper if desired. Toss and serve.
