This simple no-bake recipe for walnut date balls is a delicious blend of walnuts and rice krispies in a buttery date sauce that holds it all together in a fun bite-sized crispy snack.
How to Make Walnut Date Balls
Gather your ingredients, pre measuring each of them to get started.
Cream the sugar and oleo together in a large, heavy saucepan until smooth.
Add the beaten egg and dates, stirring to incorporate.
Cook the mixture over low heat, stirring constantly until it reaches a very thick texture. Remove from heat, add the vanilla extract, stirring well to fully incorporate. Cool the date mixture for at least ten minutes or so, or until it reaches a temperature you can handle.
Add chopped walnuts and Rice Krispies cereal, mixing well. Form into balls (helps to use a cookie dough scoop or butter your hands first!), dust with powdered confectioners sugar, or roll in toasted coconut.

You’ll Need:
1/2 cup Oleo (aka butter)
1 c. sugar
One egg, well beaten
1 c. chopped dates
3 c. Rice Krispies
1 tsp vanilla
1/2 finely chopped walnuts
powdered sugar or toasted coconut
