This simple no bake recipe is a delicious blend of walnuts and rice krispies in a buttery date sauce that holds it all together in a fun bite-sized snack.
1/2 cup Oleo (margarine)
1 c. sugar
1 egg, well beaten
1 c. chopped dates
3 c. rice krispies
1 tsp vanilla
1/2 finely chopped walnuts
powdered sugar or toasted coconut
Cream sugar and oleo together in large saucepan until smooth, add egg and dates.
Cook until thick over low heat, stirring constantly. Remove from heat, add 1 tsp vanilla, stir well. Cool 10 minutes or so, or until a temp you can handle.
Add chopped walnuts and rice krispies, mixing well. Form into balls (helps to use a cookie dough scoop or butter your hands first!), dust with powdered confectioners sugar or roll in toasted coconut.
These are a holiday favorite in our home and make a delicious, fast, single serving snack.
