Chicken Fajita Casserole

This delicious easy dish is a great choice for family movie night or to use up leftover chicken or turkey. It’s a flavorful dish that offers plenty of veggies that the kids won’t refuse!

  • 2* 8 oz pkgs cream cheese, softened
  • 1 pkg taco seasoning
  • 2 c. cooked chicken or Turkey, diced/chopped
  • 1 bottle taco sauce (or salsa)
  • 2 c. shredded cheddar cheese
  • Chopped lettuce
  • Chopped/seeded tomatoes
  • Jalapeno slices
  • Black olive slices

Cream taco seasoning and cream cheese together. Spread in a 9 X 13 baking dish. Top with chicken, Cover chicken with coating of taco sauce (as much as you like). Cover with shredded cheese, top with jalepeno slices.

Bake at 350F for 20-25 minutes or until cheese is cheese is melted, lightly browned and mixture is bubbling at the sides. Serve over a bed of shredded lettuce, garnish with chopped tomatoes, black olives and guacamole. This can be eaten as a chicken fajita salad or served with tortilla chips.
