And here’s a little frugal tip from someone who knows: Lobster bodies and legs (not the claws) are often sold cheaply (we’ve scored them for as little as 25¢ each!).

6–9 large white or baby bella mushrooms
3 slices Swiss cheese (divided)
2 Tbsp grated Parmesan cheese
½ sleeve Ritz crackers, crushed
½ stick butter (4 Tbsp)
2–3 Tbsp crab meat (canned or fresh), use the rest to make crab rangoons
3 Tbsp chopped red onion
½ tsp Old Bay Seasoning
1 tsp minced garlic

Optional Topping:

2 Tbsp melted butter mixed with ¼ tsp minced garlic for drizzling before baking

🔪 Instructions

  1. Preheat oven to 350°F.
  2. Wash the mushrooms and gently remove the stems. Set caps aside and finely chop the stems.

  4. Sauté the chopped stems and onion until softened (onions should be translucent).

  5. Add crab meat. Stir and sauté for 30 seconds.
  6. Add garlic and Old Bay seasoning. Mix well.
  7. Stir in crushed crackers. Let it absorb for a minute.
  8. Chop up 1 slice of Swiss cheese and stir it into the mixture along with the Parmesan.

  10. Top each with a small square of the remaining Swiss cheese slices.
