Sweet-n-Sour Kielbasa

2 lbs Polish Smoked Kielbasa
1 can chunk pineapple, save juice
1 can mandarin orange segments, drained.

Cut the kielbasa into 1 inch slices and set aside in a large saucepan. Pour the pineapple chunks & mandarin orange segments over the kielbasa.

In another saucepan combine:

1/2 C Brown sugar
1/2 C Vinegar
1 Tsp Salt
4 Tbs ketchup

Bring to a simmer and add:

3/4 cup pineapple juice
2 tsp cornstarch dissolved in the cold pineapple juice

Bring to a full boil, pour the sauce over the kielbasa and simmer for 15-20 minutes.
Serve with a side salad.

This is one of our favorite dishes to freeze.

  1. at what point do you freeze this? after everything has been mixed together? after every ingredient is added?

what about thawing – how do you go about fixing the frozen meal? thanks!
