Waffles

4 Eggs; separated
2 2/3 c Milk
4 tb Vegetable oil
4 c Homemade quick Mix

Beat egg yolks, milk and oil together. Add Mix, stirring until mixture is smooth. Beat egg whites (at room temperature) until stiff peaks form, and gently fold back into the batter.

Pour about 1/3- 1/2 cup batter into a hot, lightly oiled waffle iron. Bake about 5 minutes or until steaming stops. Repeat procedure until all batter is used.

Cool completely, flash freeze prior to vacuum sealing, or wrap in saran wrap and freeze.

For a quick breakfast, pop 2 in the toaster and serve with butter and maple syrup.
