Marzipan is a lightly sweet confection with a distinctly strong and pleasing aroma and delectable almond flavor.
8 oz. almond paste
2 Egg Whites
3/4 C. confectioners’ sugar
1/2 tsp. almond extract
Food colors
Beat all ingredients except food colors on low speed until smooth paste forms. Cover and refrigerate 1 hour.
Divide dough into equal parts, depending on how many different colors you will use. Add food colors and shape the dough. Store in refrigerator or at room temperature.
To Make your own Marzipan Completely from scratch:
2 c. Confectioners Sugar
1/2 pound finely ground (blanched) almonds
2 egg whites
1/2 tsp salt
1/2 tsp almond extract
Blend all ingredients together until smooth and well blended. Cover and chill for 24 hours to fully set.

is there a limit on how finely ground the almonds can be? i make almond butter and almond milk with my juicer. if i run them through dry do you think that’ll do the trick?
You want them finely ground, but you don’t want the flavors/juice extracted from them or your marzipan will be tasteless.
