Lemon Extract

Recipe #1

1 lemon
1/2 cup vodka
1/2 cup water

* Peel lemon removing all of the white pith from the peel
* Dice the lemon peel finely
* Combine vodka, water and peel into a large glass jar, seal
* Store for 5 days before using

Recipe #2

1 large lemon
1/2 cup vodka

* Peel lemon making sure the peel has no white pith on it
* Chop peel roughly
* Add peel to vodka and heat to boiling
* Pour into a glass jar and seal
* Set aside for at least two weeks then use as needed

Recipe #3

1 lemon
1/4 cup water
1/2 cup vodka

* Remove peel from lemon, scrape off white pith
* Dice lemon peel
* Combine vodka, water and peel in a large glass jar, seal
* Set aside and steep for 5 days before using

Tips:

* Do not store in direct sunlight
* Can be used for up to one year
* Make sure your glass jars and bottles are sterilized before using

These would make lovely gifts, just pour the finished lemon extract into little glass bottles and tag with the recipe.
