Butterscotch Pudding & Pie Mix

Make your own butterscotch pudding (& pie) mix to have on hand for fast, easy, preparation of homemade desserts that aren’t loaded with artificial colors and preservatives. This simple recipe makes a lovely addition to gift baskets or as jar gifts.

1 3/4 cups brown sugar — firmly packed
3/4 cup instant nonfat dry milk solids
1 cup cornstarch
1/4 teaspoon salt

Combine all ingredients in a ziploc bag, seal and shake to combine.

Makes 3 cups mix, enough to prepare 24 individual servings of prepared pudding.

To Use:
For each 2 servings, use 1/4 cup of Butterscotch Pudding Mix and 1 cup of milk. Combine mix and milk in small saucepan with 2 tablespoons margarine and heat over very low flame, stirring constantly, until mixture boils. Boil gently, stirring for 1 minute. Remove from heat and pour into 2 individual serving dishes. Refrigerate; pudding will thicken further as it chills.
