Chocolate Pudding Mix

Make your own rich chocolate pudding mix from scratch with this no-sweat recipe that can be prepared ahead of time and stored in the pantry.

This first recipe isn’t an “instant” chocolate pudding mix because it needs to be cooked on the stove to prepare. It does only take about 6-8 minutes to prepare from the homemade mix though and offers tremendous flavor.  Our “instant” pudding mix follows, but we recommend allowing it to set for 30 minutes prior to serving to allow the flavors to fully develop.

Chocolate Pudding Mix

You’ll Need:
8 C. nonfat dry milk powder
4 C. sugar
1 vanilla bean, cut into pieces (with seeds)
3 C. cornstarch (1 lb.)
1 tsp. salt

Measure all ingredients into a large bowl, blend well until thoroughly combined.

Divide the mixture into 12 separate vacuum seal/ ziploc bags, placing 1 1/4 c. in each bag, add 1 oz square (chopped finely) of unsweetened bakers chocolate to each bag. Seal and store.

How to Make Homemade Chocolate Pudding from the Mix

To use:
1 pkg. Homemade Pudding Mix ( 1 1/4 cups of pudding mix)
3 c. boiling water

Combine all in med. saucepan, Whisk constantly over low heat until thickened. Remove from heat, cool, and serve.

If you’re a “texture” person, you can prevent a film from forming on the top of the pudding by covering it with plastic wrap (touching the surface of the pudding) while it’s still warm.

Homemade No-Cook Instant Pudding Mix

This instant no-cook pudding mix is exactly what it sounds like, an instant pudding that doesn’t require cooking to prepare.

You’ll Need:
2 cups each of:  granulated sugar
                             instant clear jel
                             dutch process cocoa powder
1/2 teaspoon salt

Directions to Prepare Instant Pudding Mix

  1. In a blender, add the granulated sugar, instant clear jel, and salt.
  2. Secure the lid and blend on high for about 30 seconds, or until the ingredients are completely mixed and finely powdered.
  3. Let the contents settle for 3-5 minutes prior to removing the lid and adding the cocoa powder.
  4. Once again, Secure lid and blend on high for about 15 seconds, until the ingredients are fully combined and powdered.
  5. Let the contents settle for 5 minutes before transferring to mason jars for storage until needed. (up to 1 year)

Directions to prepare pudding from Instant Pudding Mix:

You’ll Need:
3/4 cup Pudding Mix
2 cups Cold Milk (or Coconut, Almond, Soy or Rice Milk)
2 tsp Vanilla Extract

Pour cold milk into a medium-sized mixing bowl and add the vanilla extract.
Sprinkle 3/4 of a cup of homemade instant pudding mix over the top and beat with an electric hand mixer until thickened.
It will be soft set immediately but improves in flavor and texture if it is allowed to rest (with a piece of plastic wrap directly on the surface) for at least 30 minutes.

If the pudding is too soft-set for your particular taste preferences, increase the amount of pudding mix by 1-2 Tablespoons, as desired.

  1. if i were to use cocoa powder instead of the baking chocolate, would i make the usual substitution of 3 level tablespoons unsweetened cocoa and 1 tablespoon butter?
