Dried Tomato Basil Pesto

Dried Tomato Basil Pesto is a great way to enjoy those home-dried tomatoes in a delectable pesto for full flavor.

 

Dried Tomato Basil Pesto

You’ll Need:

¼ cup dried tomatoes, broken into pieces
2-3 cloves minced garlic
1 tbsp. extra virgin olive oil
1 tbsp. dried basil
½ cup water

Sauté garlic in olive oil — do not brown! Turn down heat, add dried tomatoes and basil, stir to coat. Immediately add water and stir. Cover and steam 2-3 minutes until tomatoes are plumped.

transfer to food processor or blender and pulse until the desired consistency is reached, serve with pasta, crostini, or crackers and cheese.

Keeps well in the refrigerator. (Note: Omit basil for Dried Tomato Pesto.)
