Diabetic Cinnamon Cookie Mix

Create your own Diabetic Cinnamon Cookie Mix in a jar, light “sugar” cookie texture and flavor with a hint of cinnamon, these yummy morsels are perfect for dipping in hot cocoa!

5 tsp granulated sugar replacement
1 tsp cinnamon
1 1/2 cup flour
1/2 tsp baking soda
1/4 tsp salt

Measure all ingredients into a ziploc bag or jar, seal. (makes 1 jar)

To make cookies:

Combine 2 eggs, beaten
2 tbsp water
1 jar of mix

Bake at 375 degrees F for 10 -12 minutes. Makes 1 dozen.

Exchange 1 cookie: 1/2 bread
Calories 1 cookie: 41

  1. i would think the pan would need to be greased. you could probably add some healthy omega 3 butter to this as well to make the cookies more moist.

  2. This recipe is confusing me, surely it makes makes 1 batch but how many in a batch? I can’t believe it makes only 1 cookie?
