Cranberry-almond cereal mix

If you’re trying to avoid chemical-laden commercial cereals, you’ll love this healthier version Cranberry Almond Cereal mix that you can make at home and store up to 6 months.

You’ll Need:
1 c Regular rolled oats 1 c. Quick-cooking barley
1 c. Bulgur or cracked wheat
1 c. Dried cranberries or Raisins
1/2 c. Toasted sliced almonds
1/3 c. Brown Sugar (or sucanot, or plain sugar)
1 T. Ground cinnamon
1/4 tsp Salt

This mixture can be made up to 6 months in advance and stored in an airtight storage container. In a container of your choice stir together oats, barley, bulgur, cranberries, almonds, sugar, cinnamon and salt.

Cover tightly; store in a cool, dry place.

The entire recipe makes approximately 4 2/3 cups mix (7 servings).

For each serving: Stir stored mix, then, in a large microwave-safe cereal bowl, combine 3/4 cup water and 1/3 cup cereal mix.

Cook the cereal, uncovered, on 50 percent power for 9 to 11 minutes or until cereal reaches desired consistency, stirring once during cooking. Alternatively, you can cook this on the stovetop, stirring frequently.

Stir before serving. If desired, serve with milk, which will increase the amount of protein in the cereal.

Nutrition information per serving: calories, 300; fat, 5 grams; carbohydrate, 62 grams; cholesterol, 0 milligrams; sodium, 83 milligrams.

  1. I used the quick cooking barley and this cereal was really tasty, add 1/4 teaspoon of Cardamom to the mixture for a little kick too.
